I wanna wok and woll all night....

Ya'll, Trader Joe's is the best. I have to declare that I did NOT make the orange chicken from scratch; however, I did prepare it. It's one of those "toss in the oven, microwave the sauce and toss together" meals.


The stir-fry noodles and veggies on the other hand....that was all me (with a little help from some store bought stir-fry sauce). I don't think I really NEED to tell you how I did it...do I? Well I chopped up some of the veggies and put others in whole in a HOT oil in a HOT wok. Next, I added a little (too much...whoops) sauce and mixed well. Then, I put that in a bowl on the side, tossed in some left over angel hair from a couple of nights ago (with a skosh more oil) tossed in a quarter cuppa hot water then added the saucy veggies. Toss and serve. I even garnished it with some orange slices to make it look all purdy and such.

Chicken in a Balsamic Pear Sauce


This was so good. My wife, Juilie received for Christmas, a subscription to Good Housekeeping and this was in the issue with Dr. Feel and his wahfe. (I will not like that door knob.) Anyway, I did serve couscous, but not the other stuff...I like my julienned veggies better.
Here's what you need:
  • 1T (+ 1t) EVOO
  • 4 sm. boneless, skinless chicken breasts (approx 1 lb.)
  • 2 Bosc pears, unpeeled, cored and 1/8th'ed
  • 1 cup Chicken Broth
  • 3T Balsamic
  • 2t Cornstarch
Here's how you do it:
  1. Heat EVOO in 12" skillet (med. heat), add chicken and cook until done. Transfer to plate
  2. a.Cook pear wedges 3-4 minutes in same skillet (or until lightly browned & tender) 2b. mix balsamic, chicken broth and cornstarch while pears are cooking
  3. Pour balsamic mixture in with pears, bring to a boil, reduce to medium heat for 1 minute (until it begins to thicken).
  4. Return chicken (and any run-off juices from plate) and heat through.

NOTE: cans of chicken broth are 14 oz. what do you do with the other 6 oz? well, you boil that (along with 2oz water) and use that for the couscous. (Honey, I forgot to add the water last night and that may have been why the couscous was a little dry....my bad! It was still an amazing dinner.)

Well there you go.....the good, the bad and the yummy!

New Years Eve




Need I say more? Oh yeah...those were hand toasted almonds, by the way. Them was good!

Baked Bacon


Now don't be thrown off at the beautifully fried egg to the left. It's the bacon on the right ya'll need to give a shot.
Placing it on a baking sheet, sprinkling a generous amount of brown sugar, black pepper and chili powder and putting it in a 350 degree oven for say 10 minutes (if I remember correctly).

Just thought I would throw out my attempt at being like Mattbites only in a 3rd rate kind of way. He's a real food photographer. This was my attempt at doing a sauce as well. Don't you like the presentation?

Tri-Tip seared and finished in a HOT oven w/julienned zucchini and carrots.

It was good.

Happy Birthday, Jesus!



Well, every year we have a party to celebrate the birth of Jesus. My oldest reads the story of Mary, Joseph and the gang, we break bread, then go carolling.

The food was good, especially the slow cooked pulled pork and beef. The crock pot saved the day! Also was the cream cheese dip w/bacon and stuff....we went through two of them.

I should also note that the salad brought by the Meloni's was particularly yummy because it had pears and candied and roasted walnuts.....phew....I had 2nds.

which one is "Greater than"? (>, <)

No, that's not a face from Southpark, but it's a question. I know this is a "food blog" and not a personal view blog, but they come together at some point, right? Well, while on Shaun Groves's blog, I saw Jesus>War. Now we know that Jesus is greater than war, but we also need to remember that Jesus is greater than our pie holes.

So, we need to eat less, give more and pray even more-er.

Eggs, Bacon, Chips and Beans

Yes, folks, this is what the Caddywampus is about. Simple foods that are good. Now, the kids across the pond have different ideas about what mixtures as good food, but I'm sure they would say the same of Roscoe's Chicken 'n Waffles.

However, I say....I found a blog that was right up my alley. Eggs, Bacon, Chips and Beans (chips = Fries) goes to many different establishments and orders up the four ingredients. How much fun is that? That's like how I like to order a French Dip wherever I go. Just to see which one is better. (Well, I used to, but I haven't done it in a long while.) What better than a plate of side dishes?

Quick Minestrone


My wife made this....it was good.....I wish I could get her to tell me how she made it.....she likes to hid things from me.


I hate mixing hot chocolate

Maybe I'm just a "we todd", but I have a hard time making sure my hot chocolate mix is all the way mixed.....is it just me?




Barry Whatilow?

OK...I haven't posted in a while. I've been busy....sorry. I could say the wampus has been closed for re-design...but it would only be polishing a turd.



My mother-in-law makes a dish that is tradition in her family that started out with the name Berry-Mallow Casserole. Then somehow it started sounding like, yes, you guessed it...."Barry Manilow". It's a pretty amazing dish, actually. My wife's jaw will be hurting from hitting the floor after reading this because it took me 3 years just to put that particular food to my lips. Can you imagine eating something called "Barry Manilow"? You take yams, cranberries, brown sugar, oatmeal and marshmallows and put them together. (I'm not allowed to divuldge the family recipe.) But that sounds like a decent dish, huh? "but it's called 'Barry Manilow'!" Stop arguing with yourself and try it, ya sissy.



Year three, I tasted it. Year four, I put a serving on my plate. Year 5, I had seconds and then stood over the dish picking at it. Well......I'm a convert........BRING ON THE MANILOW!

Something new.....

Tonight I did something I had never tried before. First of all, I did this to my pork chops. (Repeat offender) and J had some potatoes out for the baking. (we microwave potatoes and call them "baked". does anyone else find that odd?) Then in need for something else that we thought we might get the kids to eat. HMMMMMMMMM, what do we have?

In the veggie drawer, there is a bag of butternut squash. ("I can't eat 'squash', it sounds like it's been sat on", George Carlin...pardon the language) I dusted it with a little bit of salt, some sugar and some cinnamon...oh...and a bit of olive oil. Then I put it in the toaster/convection oven at 425 Fahrenheit for about 20 minutes until it was pretty tender. Next, I dropped all that in the blender w/1 Tbspn of butter, maybe 1/4-1/3 Cup of milk, more sugar and cinnamon and pureed it.

It was good. Since I didn't make that much and it went on all the plates, I figured I would show a Carlin video. I love this one.

Birthday Dinner!

My wife left me this weekend. She came back, but left me all alone to go on a church retreat with her mom. It was also my mother-in-law's birthday this weekend and my wife asked if I could get a box of cake mix and maybe dinner. I got excited! Since I started my new job, I have not really been able to cook like I enjoy.

After church, I went to the Stater Brothers to pick up a few things. I found London Broil on sale....mmmmmmmmmmm, bought a couple of zucchinis, a box of cake mix, bag o' salad, a cucumber and tomatoes (for the salad), a tube of pizza dough, and 7 ears of corn. (I think that's all I bought)

Menu:
Appetizer;
grilled pesto pizza

Entree:
London Broil w/roasted garlic dry rub (salt, sugar, pepper, roasted garlic, a tad bit of orange juice)
Julienned Veggies (carrots/zucchini)
Grilled Corn on the Cob

Dessert:
Yellow cake w/chocolate frosting

I don't have any pictures, but the meat came out a little on the salty side...so I figured if I just sliced it as thin as possible, you wouldn't get that salt crust and I was right. Maybe a little too much salt. It was really fun to create in the kitchen and the kids were really good while I was getting things ready. It was wonderful to have my wife home! I would never want to be a single parent and my hats go off to those who are....especially with more than one child.
